上海/2019年9月29日 ——“九月圆脐十月尖,持螯饮酒菊花天。“金秋时节,蟹因霜重金膏溢,正是品鲜之佳期。肉质细嫩,膏似凝脂的大闸蟹,味道鲜美,更是深秋初冬难得的舌尖尤物。

谈起品蟹,据说最早可追溯到西周时代,蟹肉上席百味淡,正宗蟹宴往往以清蒸大闸蟹为首,尤其是雌蟹的黄,雄蟹的膏佐以传承千年文化的手工黄酒,配以姜、醋,持螯把酒,再赋上一首菊花诗,此等情致人生几何。此度上海世茂皇家艾美酒店中餐行政总厨李师傅精选品质上乘的大闸蟹,经过巧手烹饪,奉上款款时令美馔。

石锅蟹粉捞饭

香糯圆润的米饭配上金黄鲜美的蟹粉,加入大厨手打蟹油,香气四溢,带来名副其实的味蕾享受。

蟹粉黄鱼烩白玉

蟹粉中保留了蟹肉原有的清甜,且香浓柔腻,与白玉豆腐相得益彰,配以同样鲜美的黄鱼悉心烹调,献上这一道美味三重奏。

毛豆仔鸡炒毛蟹

来自李师傅的灵感创意,将仔鸡与毛蟹一同煸炒后加入红烧汁调味,配以姜蒜爆香,并置于滚烫的砂锅内令其香气倍增,充分体现了海派料理文化。

手工蟹粉狮子头

从纯手工拆蟹粉,调味,搅拌,到精心料理摆盘,方呈现出这一道考验大厨功力的菜肴。口味平衡饱满,秀色可餐,每天仅供应20份。

本季金秋蟹宴融合传统、创新、与海派元素,零点选择还包含经典蟹粉小笼包,风味蟹粉小云吞,以及每日新鲜供应的清水大闸蟹,特色熟醉蟹,金秋蟹粉鱼柳羹,清炖毛蟹老鸡盅,葱油蟹粉干拌面等。同时供应多款阳澄湖大闸蟹精美礼盒。

艾美轩中餐厅位于酒店8楼,以古代象征“尊贵”与“吉祥”的朱砂红为主色调,宫廷朱漆、书辞墨宝等代表古代皇家礼制的“国风”元素与上海本地独具特色的海派文化艺术相融合,餐厅过道中疏密有致的汉字金属片,把经典粤菜与上海特色本帮菜名分解穿插,即是对当地饮食文化的记载,也象征着两地美食的相互交融创新与传承。
